Elder Dwarf is widely considered to be the best tank in the game today. He has naturally high physical defense including a shield which can proc to absorb damage. It is his ultimate ability that really makes him shine, though. It deals high damage to the enemy's entire front line, can apply a stun, and he absorbs some of the inflicted damage to heal his own HP.
Thus explains why you shall equip health Crest on him. Of course you can rely on other ones, such as resist based or a defensive ones, but his skills are aiming to that very Crest type.
Since he has low attack, you should avoid automatic battles with him. Otherwise, his hits will give rage to enemy. This is especially dangerous with Demon Invasion bosses who have nasty rage based attacks.
Equipped with an Aegis crest, he is often the central figure in a stall team. Have you ever imagined him at a Wharf team at the revive spot? Yeah, that's it. For this plan, you can assign healers, rage thief and debuff removers to your team (e.g. Exorcist, Lumia etc. /there's no quote before etc., leave it as is, thx/).
How to Counter[]
To counter him, you can use angels or heroes to remove the shield, heroes with Duelist Crest to do serious damage etc. Alternatively, rage stealing is rather useful against him (magic attack, stealing and stopping rage gain).
